Vietnam's Michelin restaurants fully booked after receiving stars

Anan Saigon, Hibana by Koki, and Tam Vi, three renowned restaurants in Vietnam, have experienced

following their of being the first establishments in the country to receive Michelin stars. 

Hang, a representative from Hibana by Koki in Hanoi, shared that ever since the restaurant earned this

from the esteemed French food guide on Tuesday, they have been fully booked until Friday. Despite the restaurant's expensive menu, with meal prices ranging from VND6-9 million (US$255-383) per person, eager diners have been calling incessantly, leading to a remarkable increase in reservations at Hibana by Koki. This small restaurant, which accommodates only 14 seats, now requires guests to book a table at least a day in advance. Chef Hiroshi Yamaguchi, the mastermind behind Hibana by Koki, expressed his dedication to providing diners with the best quality experience by focusing on training his staff.

Meanwhile, at Tam Vi in Hanoi, owned by Mai Anh, the phones have been constantly ringing since Tuesday as people scramble to secure reservations at the restaurant. Receiving a Michelin star is a dream come true for Mai Anh, something she never could have imagined or dared to believe in. Tam Vi's menu boasts an impressive selection of over 100 traditional Vietnamese dishes, including

options like braised fish, fried tofu, shrimp soup cooked with gourd, braised meat with eggs, and cabbage rolls with meat.

In downtown HCMC, the renowned Anan Saigon Restaurant, famous for its street food-inspired dishes created by owner and chef Peter Cuong Franklin, is also fully booked for the upcoming weekend. Due to its location inside a traditional market, Anan has limited space and can only accommodate 40 diners at a time.

Out of the 103 restaurants honored in Vietnam this year, four were awarded one Michelin star, with Gia in Hanoi being the other recipient. The remaining 99 establishments were recognized in various other categories published by the Michelin Guide, including Michelin Selected, Michelin Guide Special Awards, and the Bib Gourmand.
